I’m working at getting more beans into our diet for protein since most of our children don’t eat eggs, and we’re eating less meat.
Hummus fits the bill. Great hummus that makes both Mom and kiddos happy!
Bring on the veggies to dip them in….
Here’s our favorite recipe, adapted from one a friend passed along:
The Best Hummus Ever
- 15 oz can chickpeas
- 2 TBs lemon juice
- 1/2 cup tahini (sesame paste)
- 1/4 cup chopped yellow onion
- 3 cloves garlic, chopped
- 2 tsp. olive oil
- 2 tsp. ground cumin
- 1/8 tsp. ground red pepper
- 1/2 tsp. salt
Drain chickpeas, reserving 1/2 cup of the liquid. Combine all ingredients in a blender or food processor. Puree until smooth, adding in chickpea liquid to thin the puree to desired consistency if needed. Refrigerate for about 3-4 hours before serving to blend the flavors.

Yum!! I love hummus too! I tried a recipe last week that called for salsa added to it! It was different, but we really liked it!
