Our family really likes this recipe:

Easy Enchiladas

12 corn or flour tortillas
4 boneless chicken breasts, cooked
one can cream of chicken
one can cream of mushroom
1 cup sour cream
1-2 small cans chopped green chilis
topping: 1 cup sour cream, 1 cup moz. cheese

Oven at 350 degrees

Cut up chicken into chunks (I shread ours with a fork) and mix with cream of chicken & mushroom, sour cream and chilis. Lightly spread oil on bottom and sides of a glass baking dish (9×13 usually). Begin layering with 4 tortillas and then the filling. Repeat. End with the last 4 tortillas on top. For the topping, spread the one cup of sour cream on torillas and then sprinkle moz. cheese. Cover with foil and bake 45 minutes. Serves 6.

I’ll usually serve this with a side of black beans sauteed in some oil and minced garlic.
